- 4 large eggs
- 1 3/4 cup sugar
- 1 cup oil
- 2 cups cooked, peeled and mashed sweet potatoes
- 1 cup golden raisins or dried cranberries
- 2 cups self-rising flour
- 2 teaspoons pumpkin pie spice
Heat oven to 350 degrees. Beat eggs until frothy. Beat in sugar for 2 minutes. Beat in oil and sweet potatoes. Sift flour and spice over raisins and fold into wet mixture. Do not over mix.
Pour into greased and floured 13 x 9 x 2 baking pan. Bake 35 – 40 minutes.
Cool and cut into 24 squares. Can top each square with a walnut half.
