Murasaki sweet potatoes are the prettiest sweet potato variety we offer. They’re also one of the most nutritious! This variety produces sweet potatoes that have a beautiful purple exterior and a white flesh. Murasaki is extremely popular in Asian markets, but is quickly gaining popularity nationwide as a favorite amongst backyard gardeners.
Murasaki sweet potatoes have a nutty flavor, similar to a water chestnut. They are not as high-yielding as some of our orange sweet potato varieties, but they have a much higher vitamin content. The drier flesh on these helps them store much longer than orange sweet potato varieties.
Murasaki Sweet Potato Growing Tips:
Murasaki sweet potatoes have the longest maturity date of any variety we offer. We list the maturity date at 140 days, but we have been able to get quality harvests at 120 days in some cases. The longer maturity date makes this a difficult variety for northern gardeners. We only recommend growing this variety if you have a long growing season.
Murasaki sweet potato plants should be spaced 16″ along the row for optimal yields. This variety is more virus-resistant than other varieties and produces beautiful vines. The vines don’t always produce flowers, but the purple flowers are a sight to see!
